Smoked salmon sandwich with guacamole

Ingredients

750 g smoked salmon

20 slices of granary bread

2 ripe avocados

200 ml crème fraiche

The juice from ½ lemon

1 cucumber, in long sticks

2 red onions, sliced

100 g mixed salad leaves

100 ml olive oil

Salt and pepper

Cooking instructions

Toast the bread in the oven or in a grill pan.

Blend the avocado, lemon juice, crème fraiche, salt and pepper into a guacamole.

Spread the guacamole onto half of the slices of toast. Place the salad leaves and salmon on top together with the red onion and cucumber.

Finally, place the remaining slices of toast on top.
