Atlantic codThe Atlantic cod (Gadus morhua) is one of the most well-known fish around the world and is appreciated for its great flavour, firm meat and intense umami flavour. The meat from the Atlantic cod around Greenland has time to fully develop the intense and slightly sweet flavour, because the cold and clean surroundings make the cod grow more slowly than elsewhere.
PlaiceThe plaice (Pleuronectes platessa) is probably the world's best-known flatfish, due to its flavoursome meat, almost creamy texture and versatility in the kitchen. The plaice is rich in protein and also low in fat, making it a healthy choice for everyday cooking and a great source of vitamins.
Greenland halibutThe Greenland halibut (Reinhardtius hippoglossoides) is highly appreciated for its snowy-white meat with a delicate and soft texture. It is easy to cook with, recognised for its delicate flavour, and extremely rich in omega-3 fatty acids, making it a much sought-after delicacy.
Patagonian toothfishThe Patagonian toothfish (Dissostichus eleginoides) also known as Chilean sea bass, is beautifully white and offers a pleasant, mild umami flavour with hints of butter, nuts and sweetness. The Patagonian toothfish is perceived a premium quality fish due to the high meat quality - firm and succulent texture flesh, that falls into large tender flakes.
