Cold-water prawns are so much more than a "prawn cocktail" which though is very retro and back in fashion. The intense cold-water prawn with lots of umami taste, firm & juicy texture and "lots of health" is also excellent in the trendy kitchen, combined with a huge range of other foodstuff, as well as at almost any occasion – prawns are excellent at snacking occasions due to size, look and taste or as “street food”, "to go and grab food" etc. In the following is a quick guided tour on ideas to succeed with prawns – a tour around the prawn; the marvelous taste, the health, the look & sound and the prawn occasions & cooking tips.

Taste combinations
The Greenlandic prawn lives in the ice-cold waters in the North Atlantic and Arctic Oceans. Due to the cold water, the prawn grows very slowly and develops a mild sweet taste as well as a little shellfish bitterness. All in all a pleasant natural ocean like flavor

The prawn is so complex in tastes – umami, sweetness and bitterness, than it is a meal in itself. Examples of greats pairings with prawn is vegetables like fennel and Jerusalem artichokes, which ads crunchiness and depth. Sweet & sour fruit like apple, melon, pineapple, and mango are great. Creamy stuff like soured milk, coconut milk and of cause avocado are also excellent partners.

Prawn occasions and the snacking revolution
The food culture in many countries and led by America, is rapidly evolving. The boundary between meals and snacking is blurring. Eating three regular meals a day is now becoming a practice of a bygone era. Snacking is now the new normal, which means either no regular meals, but a bunch of small snacks all day long or three smaller meals with snacks in between each meal. Snacking is though not only sweets but also more food like and to some extent more healthy.
