Smoked cod with tomato and olive salsa

250 g Royal Greenland smoked cod

1 small red chilli
1 ripe tomato
8 pitted black olives
1 tbsp chopped coriander
juice of 1 lime
salt & pepper

Saffron mayonnaise
6-8 strands saffron steeped in 1 tbsp. warm water
100 ml mayo
squeeze of lemon juice
salt & pepper

Cooking instructions

Mix all ingredients for the saffron mayonnaise together in a bowl, seasoning it with salt, pepper and lemon juice.
Finely dice the tomato, chilli and olives, mix together with the coriander, lime juice and season.

Arrange slices of smoked cod in the middle of each plate,
Garnish by putting 5 small piles of salsa around the plate and a swirl of saffron mayonnaise in between each.
