1 kg prawns
1.2 kg ramen noodles or buckwheat noodles
2 l strong chicken stock
2 spring onions
2 heads of broccoli
Salt and pepper
Cut the broccoli into florets and chop the spring onions finely.
Cook the noodles according to the instructions on the packet and cool down in ice cold water.
Boil the eggs for 7 minutes. Peel and halve them.
Boil up the stock and season with salt and pepper. Then boil the broccoli florets in the stock for 4 minutes. Finally, add the noodles and the spring onions and let them boil very briefly.
Divide up the noodles, spring onions and broccoli into 10 bowls and pour over the stock.
Arrange the eggs and prawns in the bowls and serve immediately.
