4 portions of Greenland halibut, 140-160 g per piece
2 dl soy sauce
Chili and ginger to taste
Panfry the halibut skin side down and keep it heated in the oven.
Reduce soy, sliced chili and grated ginger on a hot pan, season to taste with sugar.
Peel the onions and let them caramelize on a pan.
Peel vegetables on a grater, pluck cabbage and roast it.
Roast and crush the hazelnuts.
Peel flakes of parmesan and set aside for garnish.
Plate the soy sauce and tip the plate to create drops running down from it, plate the fish and arrange vegetables in a half circle. Finish by sprinkling roasted hazelnuts and parmesan flakes.
